Saltfish Fritters by THW

 

 

125g/5oz of saltfish/saltedcod soaked overnight in water

1 Spring onion

½ White onion

1 Tomato chopped with seeds removed

½ Scotch bonnet

125g Self raising flour

Black pepper

 

Prep time: 5 mins

Cook time: less than 15 mins

Total time: 20 mins

Serves: makes 6

 

  1. Soak saltfish in water overnight and change water atleast twice

  2. Chop, spring onions, white onions, scotch bonnet, tomato,

  3. Pour flour into mixing bowl; add 100ml of water to make a thick paste

  4. Add ingredients and mix well, season with pepper only.

  5. Pour oil into a deep frying pan, drop a breadcrumb in the hot oil to test whether or not it is hot enough.

  6. Gather mixture and drop rounded spoonfuls into pan.

  7. Fry for 3-4 mins on each side until golden

  8. Have as a snack on its own or serve with Mango and Cucumber salad and a wedge of lemon.
