Mango & Cucumber salad with a ginger and lime dressing by THW


1 fresh mango (the harder the better)
1/2 Red onion
1 Cucumber
2 Baby gem lettuces
Dressing
Thumb size fresh Ginger
1 Clove of garlic
Black peppercorns
1tsp Capers
1 lime
2 tbsp Olive oil
1 tbsp Balsamic
1 tbsp Clear honey
Prep time: less than 10 mins

Cut stalk of baby gem lettuce, peel away leaves and add to bowl

Cut cucumber in half length ways, scrape out seeds with a teaspoon, use peeler to slice cucumber into ribbons. Evenly distribute into bowl

Slice either side of mango avoiding the stone, chop mango into thin slices, cut red onion in half then take each half and thinly slice into semi circles.

For dressing; add olive oil, balsamic, peppercorns, fresh ginger chopped into thin straw pieces.

Squeeze lime juice into mixture and add honey, shake well, dress and toss salad. (Dressing can be stored and used again at anytime)
