Tomato Salad by NB


800g tomatoes of your choice (I used cherry and red and yellow baby plum.)
Fresh Garlic
Good salt (pink if you have it – Not table salt)
Basil
Olive oil
Prep time: 10 mins
Chill time: 30 mins
Total time: 40 mins
Serves: 4 people

Slice a variety of small, ripe tomatoes (approx. 800g).

Finely grate ½ clove fresh raw garlic

Add a generous amount of salt

Tear/chop basil leaves to taste

Pour in olive oil so that all tomatoes are covered and shiny

Refrigerate for min 30 mins
