Spanish Omelette (Tortilla) by NB

 

2 par boiled potatoes

1 small onion

6 eggs

Salt & pepper

Paprika

Butter

Rapeseed oil

chives

 

Prep time: 10 mins

Cook time: 25 mins

Total time: 35 min

Serves: 4 people

 

  1. Add oil and butter to pan on a medium heat (Pam should be ovenproof)

  2. Slice potatoes 1cm thick length wise and add to pan with paprika and onion

  3. When the potatoes are soft and the onions translucent, beat the eggs, add salt and pepper to taste

  4. Keep on a medium heat for 5-6 minutes then transfer to a medium grill for 15 mins

  5. Remove pan, with a knife, separate the omelette from the side of the pan

  6. Place a plate over the top of the pan and flip. The omelette should transfer to the plate, you may need to give it a little jimmy to release it.

  7. Sprinkle chives and enjoy hot, or at room temperature

  8. Add some cheddar with the eggs for an extra indulgent omelette.
