Parmesan and lemon crusted Salmon by THW
4 Salmon fillets
40g Grated Parmesan
1tbsp Lemon zest
50g Bread crumbs
2 tbsp fresh parsley
1 tsp olive oil
Salt and pepper
Prep time: 10 mins
cook time: 15mins
Total: 25 mins

Preheat oven to 200/350F

Add ingredients for crust (parmesan, breadcrumbs, parsley, olive oil and lemon zest) into food processor/chopper

Butter baking tray, season salmon fillets with salt and pepper, lay fillets skin side down, cover fillets with crumb mixture.
4. Bake for 10-15mins
5. Enjoy with a salad or serve with Pesto and Philadelphia tagliatelle.
