Gingerbread Gooseberry pancakes by THW

 

1 tsp All spice

1tsp Ginger powder

20g Gooseberries

20g Grapes

120ml Milk

125g/4.5oz Self raising flour

2 tbs Caster Sugar

2 tblsp of melted Butter

1 large egg

 

Prep time:  10 mins

Cook time: 10 mins

Total: 20 mins

Serves: 4 people

 

 

  1. Top and tail the gooseberries

  2. Sift flour into a mixing bowl, add sugar and salt, all spice and ginger powder

  3. Melt butter in a pan or in microwave for 20 secs, let it cool

  4. In a separate bowl whisk egg and milk and add the melted butter. (Note: if butter is too hot, it will cook the egg)

  5. Add the wet ingredients to the dry ingredients an whisk until you have a smooth batter

  6. Heat a non stick frying pan and add a knob of butter, set on a medium heat once butter has melted, add pancake batter using a ladle

  7. Serve with butterscotch sauce vanilla ice cream
