Spiced Apple and Pear Crumble by THW

For filling:
2 cooking apples
2 pears
1tbsp brown sugar
Vanilla pod
2 tbsp Honey
75ml Cinnamon whiskey
1/2 sprig Rosemary (leaves only)
For crumble topping
1 tsp Allspice
100g cold butter chopped into cubes
125g Caster sugar
150g Plain flour
100g ground Almonds
Prep time: 15 mins
Cook time 30 mins
Total time 45 mins

Preheat Oven to 180c/375F

Peel, core and pears and apples. Chop pears and apples into large chunks.

Add apple, pour honey and Cinammon whiskey into baking dish bake for 4 minutes then add pear, vanilla seeds and Rosemary leaves, stir and bake for a further 3 minutes and then add to greased baking dish.

For crumble

Mix together butter, flour, all spice, sugar and ground almonds, work crumble through fingers by lightly pinching the mix. Spoon the crumble over the fruit mix evenly.

Sprinkle with a tbsp of caster sugar and place in oven for 30 minutes until golden

Serve with custard, ice cream or cream fraiche.
